Barbecue Shepherd’s Pie


1 tablespoon olive oil
1 pound ground turkey
1 medium onion, chopped
2 medium carrots, thinly sliced
1/2 cup frozen peas
1/2 cup honey barbecue sauce
1/3 cup ketchup
1 package (24 ounces) refrigerated mashed potatoes
1/2 teaspoon paprika


  • Preheat oven to 350°. In a large skillet, heat oil over medium heat. Add turkey and onion; cook 6-8 minutes or until turkey is no longer pink, breaking up turkey into crumbles; drain. Stir in carrots, peas, barbecue sauce and ketchup.
  • Transfer to a greased 1-1/2-qt. baking dish. Spread mashed potatoes over top; sprinkle with paprika. Bake, uncovered, 30-35 minutes or until filling is bubbly.Freeze Option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

Veggie Garlic Spaghetti


Vegetable oil     2 tbsp
Garlic         5 cloves
Onion        4 medium
Carrot        2 medium
           Snap pea     1 cup
Brown sugar       2 tbsp
Soy sauce        3 tbsp
Rice noodles          9 oz


  • Heat the oil in a skillet over medium heat. Add the garlic and 3 spring onions and cook for 2-3 minutes.
  • Add the carrots and peas, before stirring in the brown sugar and soy sauce.
  • Add the noodles and mix together for another couple of minutes.
  • Season with salt and pepper, then slice remaining spring onion and top to serve.

Chili Beef Noodles

Beef      3 oz

Salt      1/4 tsp

Pepper     1/4 tsp
Chinese 5 spice    1/4 tbsp
Garlic      1 clove
Red chili     1/4 medium
Chili sauce     1/2 tbsp
Soy sauce      1/2 tbsp
Noodles          2.5 oz


  • Fry the beef for a couple of minutes with the salt, pepper, and 5 spice. Take out and set aside.
  • In the same pan, fry the garlic and red chili for a few minutes before stirring in the chili sauce and soy sauce.
  • Add the beef and noodles. Mix together for another couple of minutes.
  • Serve with some red chili and spring onions.
