Here is a sample menu for you:

Low-fiber cereal with milk  1 cup
Toasted white bread   2 slices
Grilled chicken sandwich (white bread 2 slices, chicken breast  3 oz)
Canned peach   1 cup
Greek yogurt    1 cup
Grilled tilapia     3 oz
Green beans    1 cup
White rice    1 cup

Is it a low-fiber diet?
For the first few days, the diet can start with clear liquids. Later on, you can slowly add some low-fiber foods.

Plan A
Breakfast: Quinoa porridge with berries and cinnamon
Lunch: Tuna salad with baby spinach, rocket, tomato and cucumber dressed with olive oil and apple cider vinegar
Dinner: Tempeh stir fry with veggies (carrot/broccoli heads/Asian greens/veggies working well in stir fries)
Snacks: Carrot sticks with cottage cheese

Plan B
Breakfast: Gluten-free bread topped with cottage cheese and smoked salmon
Lunch: Low-FODMAP Tomato and Leek Frittata
Dinner: Chicken/beef/fish (any quantity) +1 tbsp ketchup/BBQ sauce/mustard + 2 small boiled potatoes + ½ cup broccoli.
Snacks: 1 orange or 2 small kiwi fruit

Plan C
Breakfast: ½ cup of oats + 10 raspberries/strawberries/blueberries. Add water and microwave to make warm porridge, or just add lactose-free milk/almond milk for cereal
Lunch: Low FODMAP Minestrone
Dinner: Salmon baked in foil in the oven with sliced lime and chilli on top, served with 1/2 cup steamed zucchini and squash, and boiled basmati rice.
Snacks: 2 rice cakes topped with peanut butter and 1/2 banana

Besides, you may also want to consider vitamin D and/or probiotic supplementation alongside a health eating pattern.
With diverticulitis, you can still eat Mexican food, but there are some ingredients that you may need to avoid.

The diet high in red meat and refined grains, with low fiber content can increase the risk of diverticulitis. Substituting red meat with poultry or fish may reduce risk.

Also high FODMAP foods could cause diverticulitis symptoms, including onions, mushrooms, cauliflower, and garlic, apples, apricots, dried fruit, pears, peaches
dairy foods, including milk, yogurts, and cheeses, legumes and pulses, bread and cereals, sugars and sweeteners. As some of these foods also contain beneficial fiber, it would be better to discuss food choices and elimination with a healthcare professional.

Since each person is different, if you notice a certain food causes pain or a change in symptoms, you could eliminate that food and talk to your doctor or healthcare provider.
