In your specific case, you've mentioned that it took you a couple of years to improve and it then worsened, and it may indicate that you've bitten by lone star ticks more than once. Some people if they avoid further tick bites may get improved over years, similar to your experience in the first couple of years, then if you were bitten again, things started to get worse. So I'll recommend that you take better protection over ticks. The red meat allergy is the allergy to the substance alpha-gal that exists in the red meat. There's a possibility that in the first couple years, your antibodies diminished, so you weren't severely allergic to all beef, just the type of beef with high alpha-gal concentration.
