People with non-celiac gluten intolerance appear to suffer from a weakened intestinal barrier, which leads to an immune response after they eat foods that contain the gluten protein -- typically wheat, rye or barley.
People with gluten sensitivity have similar symptoms, such as abdominal pain, fatigue, or headaches, but they don't have the intestinal damage or more severe consequences of celiac disease.
Their symptoms also include fatigue, headache, anxiety, and problems with memory and thinking skills.
However, a gluten-free diet will eliminate these symptoms.
